The Veronese version of Panettone has raisins and is topped with almonds and a sweet crunchy glaze, but in a change to the original, without glacé fruit.
It has become a classic in its own right, and well-loved especially in Verona and now throughout the world.
One of the most popular legends for Panettone goes back to 1495. During a luxurious Christmas banquet for the Duke of Milan, the head chef burnt the dessert. A young cook, called Toni, stepped up and created a rich brioche bread from his own sourdough starter, he was saving for his own Christmas dinner. He filled it with raisins and candied fruit. The Duke loved it, and it became known as “Pane di Toni”, a tradition which is now loved throughout Italy.

In 1922, pastry chef Ruggero Bauli opened a small pastry shop in Verona Italy. He quickly gained a reputation for his delicious pastries. Growing over the years, he opened a factory in the 1950s and made his products available throughout Italy. In the 1960s, he exported across Europe and North America.
