Calabria is not a quiet region.

This is the Italy of blazing sunshine, rugged mountains, bright blue coastline and food with fire in its heart. Sitting at the toe of Italy’s boot, Calabria has an atmosphere all of its own. It feels warm and full of life, with ancient villages clinging to hillsides, sea air drifting through coastal towns and kitchen tables filled with strong, simple food made to be shared.

For anyone asking what Calabria is famous for, the answer is impossible to separate from its food. This southern Italian region is known for chilli, ‘nduja, Tropea red onions, rustic preserved vegetables, olive oil, cured meats and bold ingredients that bring warmth and character to everyday cooking.

Calabria is rich in myth, history and tradition too. Ancient stories tell of Hercules passing through this beautiful corner of Italy on one of his great adventures, adding another layer of mystery to a region already full of character.

And then there is the peperoncino.

Calabria’s famous chilli is everywhere. It brings warmth, colour and energy to the table. It gives life to ‘nduja, wakes up sauces, lifts vegetables and turns simple food into something bold, fiery and unforgettable.

‘Nduja: Calabria’s Spicy Spreadable Salami

One of the most famous foods from Calabria is ‘nduja, a soft, spicy, spreadable salami traditionally made with pork and Calabrian chilli. It is rich, smoky, fiery and full of personality.

‘Nduja is one of those ingredients that can completely change a dish. Spread it onto warm bread, melt it into tomato sauce, add it to pizza, stir it through beans or use a little to bring deep chilli warmth to stews and sauces.

It is also perfect for making a quick Calabrian-style pasta sauce. A spoonful of ‘nduja melted into tomatoes creates something rich, spicy and full of southern Italian flavour without needing much else.

Rustic Calabrian Ingredients with Big Southern Character

Calabrian cooking is often simple, but never boring.

This is food built around strong ingredients, good oil, preserved vegetables, cured meats, chillies, peppers, onions, mushrooms and rustic sauces. Many traditional Calabrian foods come from old preserving methods, created so that vegetables, meats and seasonal ingredients could be enjoyed throughout the year.

That is why Calabria is famous for jars full of flavour. Spicy vegetables, chilli oils, mushrooms in oil, red onion preserves and bold condiments all have that practical, generous, southern Italian feeling.

You can imagine them served alongside crusty bread, cheeses and cured meats, or used to bring extra flavour to everyday dishes like pasta, pizza, grilled vegetables and bruschetta.

Tropea Red Onions from Calabria

Not everything from Calabria is fiery.

The region is also famous for Tropea red onions, known in Italian as Cipolla Rossa di Tropea Calabria IGP. These beautiful red onions are sweet, delicate and deeply connected to the Calabrian coastline.

They are often used in preserves, chutneys and antipasti, where their natural sweetness balances beautifully with cheese, cured meats, grilled vegetables and crusty bread. They are also lovely with richer southern dishes, where that gentle sweetness softens the heat of chilli and ‘nduja.

This is one of the things that makes Calabrian food so exciting. It is not only about heat. It is about contrast. Fire and sweetness. Richness and freshness. Simple ingredients with big flavour.

Brasilena: Sparkling Coffee from Calabria

Calabria also has a more unexpected speciality: sparkling coffee.

In the town of Catanzaro, Brasilena became a much loved local drink, combining the refreshment of a fizzy soft drink with the flavour of coffee. It is unusual if you have never tried it before, but very Calabrian in spirit: bold, distinctive and full of personality.
